Gluten-Free S’More Cups

 

Hey All!

With a roller derby bout coming up the demand for baked goodies is upon us! Being the lazy ass that I am I wanted to make a Gluten-Free dessert that wasn’t too difficult to make. Often times I find that Gluten-Free recipes ask for A LOT of items that I am too impatient to look for at the store. So I decided to make something that was simple, and did not need many ingredients, S’more cups! Not only are they easy as hell to make they also are damn good! *side note: These were supposed to be vegan but being the spaz that I am I did not check the ingredients on the graham cracks. You can make this recipe vegan, though!*

Gluten-Free S'More Cups

  • Servings: 24-30
  • Difficulty: easy
  • Print

Ingredients

  • 1 bag of marshmallows. (I used vegan mallows!) You will need to cut 1 mallow into 3 parts (If you are too lazy to do this you can buy mini mallows)
  • 1 package of Gluten-free graham crackers (you can substitute for vegan graham crackers)
  • 1 package of semi-sweet chocolate chips (I used vegan choco chips!)
  • 2 tsp of coconut oil
  • mini cupcake liners (if you don’t have a mini cupcake pan you can put the liners on a plate)

 

Directions

  1. Line mini cupcake pan with cupcake liners
  2. Crush graham crackers into crumbs
  3. Pour 1 cup of chocolate chips into a microwave safe bowl
  4. Add 1 tsp of coconut oil to the chocolate chips
  5. Microwave in 20-second increments and stir each time until the chocolate is melted
  6. Once the chocolate is melted add a layer to the bottom of the cupcake liners (enough to cover the bottom)
  7. Sprinkle crushed graham cracks on top of chocolate
  8. Place marshmallow on top of the graham crackers
  9. cover the marshmallow with chocolate
  10. sprinkle graham cracker on top and place in fridge until firm (about 30 minutes)

Damn bitch! Look how fancy!
